Once you’ve stocked up on a few jars of pickles and ferments at home…maybe you’d like to know how grandma kept all those goodies in the pantry all winter?!  We’ll introduce you to the art of both “hot water bath” and pressure canning techniques- that will allow you to “put back” just about any extra produce or products from your garden or kitchen. From pickles, to fresh veggies, fruits, jams, jellies- or soups and stews- we’ll cover how to preserve and can safely and deliciously.

Do you love a good pickle? Wanna learn just how easy it is to make your own?! We’ll take a little introductory tour of the age-old practices for making those sweet, and/or salty, tangy (maybe spicy?) bites that make everything taste better. From a simple “quick” pickled veggies made with vinegar and salt, to the more nuanced art of fermenting- We’ll consider food preserving, probiotics and the gut health benefits- as well as sustainable food preparation. Waste not! Want not! (And have something tasty to show for it!)

Do you love your bread enough to take the leap into the sourdough universe?! Beautiful, and tasty but also a living thing that requires regular maintenance and attention to detail!  Once mastered, a healthy “starter” culture will  grace you with a bounty of baked goodness! 

We’ll discuss the process, tools, techniques and types of flour and combinations to start your bread making adventure.

If you thought bread was fun?? Then you’re the perfect candidate for making your own pasta from scratch!! Once you’ve tasted the difference between store bought dry pasta and homemade- you’ll never go back. It can be eaten fresh, or frozen or dried and stored. We’ll explore a range of different regional pasta dough making from traditional Italian egg based to Japanese buck wheat soba style. Come get your noodle on!!

Is there such a thing as too much BBQ?! Wanna get fired up?? Geek out about charcoal and wood? Argue over what cut is the best? Do you dry rub? Or wet brine? Do you “reverse” sear or slow roast? Finish in foil?! What constitutes a REAL BBQ sauce?! Carolina, Texas, Memphis, St.Louis, or Western Kentucky?! Pork, brisket, chicken, or fish? We’ll cover a range of delicious preparations and how to turn any grill into a smoker.
